After months or years of aging on the lees (dead yeast cells), the bottles are gradually tilted and rotated in a process called riddling, so the sediment collects in the neck. The bottle neck is then frozen, creating an ice plug that traps the sediment. When the bottle is opened, the pressure from the carbonation forces out the plug of ice, leaving the champagne clear and sediment-free. After disgorgement, the wine is topped up with a mixture of wine and sugar syrup (called the dosage) to adjust its sweetness level, then corked and sealed for final aging or sale. This meticulous process is key to ensuring the clarity, flavor, and quality of champagne.
